nourriture | banana buzz nice cream with cinnamon salted caramel

* admittedly, not my best photo effort. but for blog's sake! it was so darn yummy that i am glad i even remembered to snap a pic before it was all gone. 

i mean, who doesn't want dessert for breakfast? we sure do like it around here. i really do think that starting a day this way makes for a good one. how couldn't it? ice cream. well, "nice" cream. but you won't miss all that other stuff. promise. healthy can be totally decadent and over-the-top sweet. and no joke, i might have officially converted ben. he is smitten with this stuff. hubby seal of approval. gold star.

and did i mention it is SO easy? well, it is.

and now, i give you...banana buzz nice cream with cinnamon salted caramel

for two solid servings {or two plus enough for a little one} you'll need:

  • 4 super ripe, frozen bananas
  • 1/4-1/2 cup cold pressed coffee or room temp leftover coffee...and add in a teaspoon of leftover grounds for some extra buzz
  • 2 teaspoons cacao
  • 8 raw dates
  • 8 ounces fresh/raw coconut water
  • 1 tsp cinnamon
  • 1/2 tsp celtic salt

method:

remove bananas from freezer and set on the counter while preparing the caramel. for the caramel, remove pits from dates and add the dates to a blender. add in coconut water, cinnamon, and salt. blend until smooth and pourable, like caramel. set aside.

then, cut the frozen bananas into small chunks and peel away the skin. add bananas to blender with coffee, grounds, and cacao. blend until thick and creamy. scoop the ice cream into bowls and top with the caramel sauce and anything else that tickles your fancy. enjoy!

and you guys...the flavor possibilities are endless! we are coffee and chocolate lovers around here but you can do whatever you want with that easy-peasy banana base. have fun with it!
