nourriture | pistachio rosemary pesto tartine

pesto bonjour et bienvenue à la série de nourriture.

if you follow our little family over in instagramland, you have noticed that we are kind of tartine obsessed.  so very tasty and e-to-the-z.

we find that it is a fancy way to make a loaf of bread into an acceptable meal.  because, bread.  yum.

for this meal, i grabbed my favorite local loaf of seeded sourdough and topped it with fresh ricotta and a hearty smearing of rosemary pistachio pesto.

  • 1 loaf of your favorite bread.  i like sprouted or seeded.  and chewy sourdough is a must for us.
  • 1 cup of fresh ricotta
  • a generous bunch of rosemary
  • 1 cup of shelled pistachios
  • 6 cloves of garlic, 4 roasted and 2 raw
  • cold pressed olive oil
  • balsamic
  • celtic sea salt | cracked pepper
  • parmesan

roast 4 whole cloves of garlic until caramelized.  add to food processor: pistachios, rosemary leaves, roasted/raw garlic cloves, 1/4 cup of freshly grated parmesan, and freshly cracked pepper to taste.  wazz it up until broken down and slowly pour in olive oil until pesto comes together.

slice the bread, toast if you would like.  smear on ricotta as a base and then top with the pesto.  finish with a drizzle of olive oil, a splash of balsamic, a dusting of parmesan, and a sprinkle of celtic sea salt.

pair it with a tasty glass of red wine and dinner is served!
