summertime eats


what is it about summer that makes me want all the fruit? all the veg. producepalooza. we have been heavy into everything raw for the last few weeks. the days are filled with juicy and refreshing and vibrant foods. foods that keep us happy and hydrated. and for dinner, it has been about eating whatever tickles our fancy. and all about satisfying meals that are simply prepared. nothing overdone. just right.


organic yellow potato wedges brushed with a bit of coconut oil and then baked until crispy and delicious. sprinkled with celtic salt and served with quick and easy garlic chipotle avocado dip. it's the simple things. and it is all about the taters.


a tropical midday snack of papaya and kiwi.


a CSA-tastic dinner. organic madagascar pink rice with sautéed pattypan squash + ronde de nice globe zucchini + yellow onion + garlic + organic petite peas. all but the rice and peas were from our weekly agritopia haul.

ALSO, the agritopia farm stand just started selling raw goat's milk from crow's dairy. YES. i am so happy about that development. and elinor LOVES it. don't get me started on how ridiculous it is that we can't get our hands on raw dairy at the local market. silliness, i tell you. as thomas jefferson so eloquently and accurately put it: "if people let the government decide what foods they eat and what medicines they take, their bodies will soon be in as sorry a state as are the souls of those who live under tyranny." and that's all i will say about that subject.
