nourriture | sesame miso shredded salad

miso chopped salad bonjour et bienvenue à la série de nourriture.

so, arizona.  it is hot here, folks.  and when things are all oven-y outside, the last thing i want to do is use my oven. just, blerg.  you know?  if you are an instagrammer then you have seen a bit of a salad trend on my feed.  the summer season always gets me all crave-y for salads and refreshing beverages and vibrant fruits and crunchy veg and cool rawness.  this, this salad really hits the spot.  in fact, you could say that i am officially smitten. welcome to the rotation, you pretty, tasty thing you.  seriously, though. those almonds are a.ddic.tive.

here's what you will need for a meal to serve 2 1/2 people:

  • 1 small head napa cabbage
  • 1 small head of iceberg lettuce
  • 1 small head purple cabbage
  • 4-5 carrots
  • 1 itty bitty jicama
  • 1/2 cup prepared miso
  • 1/4 cup sesame oil
  • celtic salt + fresh black pepper
  • 1 tsp red chili flakes
  • 2 cloves of garlic
  • 1 cup raw almonds
  • 2 tbsp raw unfiltered honey
  • 1 tbsp liquid aminos
  • 1 tbsp + sesame seeds

method:  melt together honey and aminos in a saute pan. let the mixture bubble until it thickens. keep the mixture bubbling while you sliver the almonds. then, toss them into the mixture to coat. cook for a few minutes until the almonds are coated and "candied". pour the almonds onto parchment and immediately sprinkle with salt, pepper, and sesame seeds. allow the almonds to dry and become crisp.

shred the cabbage + carrots + jicama and place in a large bowl.

to make the dressing, add miso + sesame oil + salt + pepper + red chili flakes + grated garlic to a seal-able container and shake to combine.

dress the shredded mixture with the dressing and add any additional salt or pepper, as necessary. top the salad with the almond slivers and any extra sesame seeds...and some green onions, if you'd like.
