nourriture | spinach bean patties with smoked salmon and an egg topper
bonjour et bienvenue à la série de nourriture.
continuing our obsession with "putting an egg on it", i bring you this tasty little cutie. but seriously, this is a good one. quick and easy. and packed with flavor. oh, and healthy too. the weekday meal trifecta. {tri, if you count quick and easy as one unit. which, i do.}
here's what you will need for a meal to serve 2 1/2 people:
- 1 can of white beans, i used cannellini because they are softer and creamier than most
- 4-6 cups of fresh spinach leaves
- a bundle of spring onions
- 1/4 cup nutritional yeast
- 1 package of wild caught, cold smoked salmon
- 3 pasture eggs
- coconut oil for cooking
- celtic salt + fresh black pepper
- 2 tsp + red chili flakes
- 2 cloves garlic
- 1 + tsp garlic powder
- fresh dill or dried dill weed for sprinkling
method:
rinse and dry the beans and add to a large bowl. mash the beans until the skins are broken down and the texture is smooth. heat 1 tbsp coconut oil in a saute pan and add spinach. add in some s|p, minced garlic, and red chili flakes. saute until soft. remove spinach from pan and allow it to cool slightly. rough chop the spinach. finely mince the spring onions. add the spinach and onions to the beans and mix together until combined. season with more s|p and some garlic powder. add in more chili flakes, to taste. mix in nutritional yeast to bind. form into patties.
add more coconut oil to the saute pan and fry the patties. cook on high heat to get a good crust. do not overwork, only flip once.
plate the patties once cooked. top with salmon. using the same pan, either fry or poach the eggs to your desired texture. place the eggs on top and finish with evoo, dill, and s|p.
